Crockpot Buffalo Chicken Lettuce Wraps


If a recipe has the words "buffalo chicken" anywhere in the title I can guarantee you that I will click on it to see what it is. John is a self-proclaimed buffalo enthusiast, ranging from buffalo chicken pizzabuffalo shrimpbuffalo chicken tenders, to buffalo chicken wraps, we have had our fair share of buffalo-drenched meals in this house. John also tends to put wing sauce on pizza, chicken cheese steaks... you name it, he drizzles it on. So when I saw a recipe that was healthy AND had buffalo sauce I knew it was going to be a hit. These lettuce wraps are super easy to put together and make for a great weeknight meal. John loved this! He used the leftover chicken for sandwiches- we grilled it up with provolone, swiss, and a healthy serving of this chicken to make a buffalo chicken melt for him the next day! I wasn't as much of a fan but my issue was the texture. I prefer a more crisp chicken in my lettuce wraps and not the soft, shredded chicken. It had nothing to do with the taste and everything to do with the texture. John didn't see my issues- he happily ate his and my servings.

Ingredients:

For the chicken:

24 oz boneless skinless chicken breast
1 celery stalk
1/2 onion, diced
1 clove garlic
16 oz fat free low sodium chicken broth
1/2 cup hot sauce (I used Frank's)

For the wraps:

6 large lettuce leaves, Bibb or Iceberg
1 1/2 cups shredded carrots
2 large celery stalks, cut into 2 inch matchsticks

Directions:
1- In a crockpot, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough). 
2- Cover and cook on low 6-8 hours.
3- Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.
4- To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice.

  2. I'm such a sucker for buffalo-style ANYTHING! Love this healthier version to enjoy the usually unhealthy buffalo flavor!
