Chicken Parm Panini


Remember a few weeks ago when I said how madly in love I was with my panini press? Yes... still in love. Madly, deeply, head-over-heals in love. So with that said, if it's not nailed down it's probably being shoved between two pieces of bread and grilled up in my house. This panini is just so simple and so good that I almost feel silly sharing it. I mean it's not ground breaking but it is amazingly delicious. So with that said, I bet you have most of the ingredients already on hand and could make this immediately. I suggest you do! I am actually planning to make it again this week, it's just that good.

Ingredients:
2 rolls
2 chicken breasts
1/3 cup breadcrumbs
1/3 cup parmesan cheese
1 egg
2 tbsp pesto
1/2 cup marinara sauce
4 slices fresh mozzarella cheese

Directions:
1- Slice rolls and set aside. Preheat over to 375.
2- In a small bowl combine the breadcrumbs and parmesan cheese. In a separate bowl beat the egg.
3- Dip the chicken in egg then breadcrumb mix.
4- Bake for 20 minutes or until cooked through (depending on thickness of breasts).
5- Slice chicken so it'll fit on the roll. Top one side of each roll with 1 tbsp of pesto. Spoon marinara over the other side of the roll. Spread remaining marinara evenly over the chicken.
6- Place one slice on each piece of the roll, placing the chicken in the center of the two pieces of cheese/bread.
7- Grill on panini press until golden.
