Baked Pesto Chicken


This is another gem I found on Pinterest and knew I had to make immediately. Lately I've been all about pesto which is pretty funny since I used to think it was the most repulsive flavor in the world. Basil is not my favorite seasoning, but I do love pesto. I am really fond of Knorr's packet of pesto mix. Before you go clutching your culinary pearls and never return to my blog, allow me to explain. I know it's not "real" pesto. But for starters it's much lighter. I make it with all water and just a splash of oil so it's not nearly as fattening. I also like that it's more mild. Sometimes pesto can have a bitter taste. I'd say 95% of my recipe that call for pesto use the Knorr's mix. If you love traditional pesto this mix is not for you. But I do highly recommend it to anyone who's on the fence!

This dinner can't be easier. Chicken tender. Pesto. Mozzarella cheese. Bake. Eat.

I mean, really, does it get easier? Nope! John and I both really enjoyed this. I loved the crunchy cheese on top of the saucy chicken. Next time I'd probably serve it with pasta or mashed potatoes or rice- something to sop up the extra sauce. I did pour some extra sauce over my roasted potatoes and enjoyed it, but it could have really used something to sop up the goodness. This is a perfect weeknight meal. You can definitely assemble it ahead of time and then just throw it in the oven when you're ready to eat. I can guarantee you this dish will appear on my menu my first week back at work!

Ingredients:
1 pound chicken tenders
1/2 cup pesto
1/2 cup shredded mozzarella cheese

Directions:
1- Preheat the oven to 375.
2- Pour a thin layer of pesto on the bottom of the dish. Assemble the chicken on top. Pour the remaining pesto over the chicken.
3- Top with the mozzarella cheese. Cover tightly with foil.
4- Bake 25 minutes, or until chicken is cooked through. Remove the lid and turn the oven to broil. Cook until the cheesy is golden.  (Keep an eye on it- it'll burn quickly!)

  2. You sold me with the 3 ingredients!! Made this for dinner & my hubby loved it. Super easy!! He wants this added to the rotation he said, love to hear that!
