Crispy Honey Ginger Chicken


Did any of you watch "Food Revolution" with Jamie Oliver? I was *obsessed* with that show! During one of the episodes Jamie showed how they make "chicken" nuggets. Oh my... I gagged and had to turn away. I won't ruin it for you but if you are interested check out Hulu.com and search Jamie Oliver. It's eye opening. I eat very healthy but chicken nuggets (particularly McDonald's) were my vice. I still needed them about once a week. After seeing that I can happily report I haven't had any McNuggets in 6 weeks! That's the longest I have gone in years!

However, even though I haven't been to McDonald's I have been craving chicken nuggets like crazzzzzyyyyyy. I made this recipe to try to cure my craving and boy oh boy- it did the trick. I drizzled some with the honey at the end and some without because I knew I wanted to dip them in ketchup and I didn't think the honey/ketchup combo would blend. Both versions were amazing. I can see myself making these for years and years to come. Even John loved them and he's not a chicken nugget kind of guy (although I did toss his in Buffalo sauce and John would eat bugs covered in Buffalo sauce!) They were perfectly crispy and tender... oh man, I need them again soon.

Ingredients:

2 cups Lowfat Buttermilk
¼ cups Honey, Plus More For Drizzling
2 Tablespoons Ground Ginger, Divided
2 teaspoons Garlic Powder, Divided
1 pound Boneless Chicken Tenders
2 cups Panko Bread Crumbs
1 teaspoon Seasoned Salt
¼ cups Whole Wheat Flour

Directions:

Combine buttermilk, honey, 1 tablespoon ginger and 1 teaspoon garlic powder in a baking dish. Cut chicken tenders in half or thirds and add to the buttermilk. Marinate for 2 hours or overnight.
Preheat oven to 450F.
Combine panko, remaining ginger and garlic, seasoned salt, and flour in a large bowl. Coat chicken pieces in the panko mix, then lay on a wire rack sitting on a baking sheet. Continue with remaining chicken pieces. Spray each piece with cooking spray or olive oil.
Bake for 10 minutes, flip, coat again with cooking spray, and bake for another 10-15 minutes.
When finished, drizzle honey over the chicken pieces.
