Banana Chocolate Chip Bread


I love bananas and eat them multiple times a week. However, no matter how fast I eat them I always end up with a few black ones. Yuck. I used to throw out the black ones but now I know better and freeze them for days when I need to bake something quickly. This bread was part of the sweet bread platters I mentioned in an earlier post. It came together quickly and baked up beautifully. It was moist and tasty. If you are looking for a classic banana bread recipe this would be good. It's a little dense, I typically like my bread fluffier, but it was still super tasty.

INGREDIENTS
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
3 tablespoons mini chocolate chips

METHOD
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Mix in 2 tablespoons chocolate chips. Pour mixture into a buttered 4x8 inch loaf pan. Top with remaining tablespoon of chocolate chips. Bake for 45 minutes-1 hour (mine took 45). Cool on a rack. Remove from pan and slice to serve.

  2. This recipe came out awesome- I added a tablespoon of peanut butter just for kicks. It tastes very strongly of banana, nice and moist, and the chocolate chips are great of course. Thanks for sharing!
