Shrimp Caprese


This meal here is one of those meals that looks impressive, tastes impressive, but is so easy that it's almost embarrassing to share the recipe because it's just that simple. But, simple and delicious are seriously the best combinations when it comes to cooking. When I first saw this recipe the photo in the original post (linked below) just wowed me. It looked so amazingly delicious and I knew I needed it. This recipe created a delicious meal that both John and I were thrilled with. Best of all it came together in under 10 minutes. You can't top that!

Ingredients:
1 tsp olive oil
14 large shrimp
1 Tbsp pesto
8 grape tomatoes, cut in half
2 oz fresh mozzarella, cut into cubes
Parsley, fresh or dried

1-Add the oil to the skillet and heat over medium heat. Add the shrimp and cook about 2-3 minutes, until lightly pink.
2-Add all of the other ingredients to a large saute pan on medium-high heat. Stir to spread the melting cheese. 
3-Cook for about 2-4 minutes, just until the tomatoes are tender and the mozzarella is nice and creamy. Transfer to a plate, top with parsley.
