Chocolate Mint Cake Batter Cookies


When I get a craving it can be relentless. I MUST have it and I won't stop thinking about it until I do. When I posted these chocolate butterscotch cookies back in October I mentioned how I originally wanted chocolate mint but couldn't find the chips. Low and behold, two months later I still wanted them, still couldn't find the chips. So being the sane and rational person that I am I spent double to buy the chips on Amazon. Best purchase yet! It did annoy me to pay twice as much but they were so good and soooo worth it. I made a ton of these because I made them for John's bake sale at work and for my cookie swap at work. They were well received everywhere so to me they were well worth the overpriced mint chocolate chips! Hopefully you can find them in your stores, but if not... and you NEED them like I did... it's worth buying the chips from Amazon. They're very good!

Ingredients:
1 box chocolate cake mix
1 tsp baking powder
2 eggs
1/2 cup vegetable oil
1/2 cup mint chips
1/2 cup chocolate chips (OR 1 cup mint chocolate blend in place of the two 1/2 cups listed)

Directions:
1- Preheat the oven to 350. Combine the first four ingredients and stir well, until well combined.
2- Stir in the chips.
3- Scoop dough in 1 tbsp sized balls onto a greased (or silpat covered) baking sheet. Bake 10 minutes. Allow to cool 2-3 minutes before removing to a cooling rack.
