First off, I hope you all had a wonderful Thanksgiving! I know our holiday was great. Lots of good food, good company, etc. This past week I was so busy with parent-teacher conferences, Thanksgiving, a day trip, and just life that blogging escaped me. I do apologize. This coming week is equally insane with more nights of conferences, Landon's first birthday (HOW?!?!?!), and Landon's first birthday party. I am not going to neglect you this week though, I'm planning ahead for once!
So anyway, back to the topic of this post, cajun chicken sandwiches. John is a big cajun chicken guy. Pre-Landon we used to eat out

Ingredients:
4 strips of bacon, halved
4 boneless skinless chicken breast cutlets, pounded thin
Cajun or creole seasoning
4 slices cheddar cheese
Ranch dressing
Lettuce/tomato
4 sandwich buns, split and toasted
Directions:
1. Add the bacon to a large skillet and cook over medium heat to desired crispness. Remove to paper towels to drain.
2. Season chicken generously with Cajun seasoning. In the same skillet you used for the bacon, cook the chicken until browned and cooked through.
3. To serve, place chicken on the bottom half of a bun and top with a slice of cheddar cheese, two pieces of bacon, and a drizzle of ranch dressing. Top with lettuce and tomato.
