Cake Batter Doughnuts


I have some great blog readers who comment regularly, email regularly, etc. One of these amazing people sent me her recipe for cake batter doughnuts knowing it would be something I'd drool over. I can't believe it took me so long to make these bad boys, but I finally got around to it. I made these for that bake sale I mentioned in my last doughnut post and they were great. I actually tasted a bite of these since John insisted on having one (even though I reminded him they were for charity... can't trust that John of mine!) And clearly if he was going to try one I *needed* to steal a bite of it. Clearly. But what's not to like, I mean, it's cake batter and vanilla glaze and sprinkles. Yes please!

Ingredients:

1 cup all purpose flour
2/3 cup yellow cake mix
1/4 cup sugar
2 tsp. baking powder
1/4 tsp. cinnamon
1 tsp. salt
3/4 cup milk
2 eggs, beaten
1 tsp. vanilla extract
sprinkles (several Tbsp.)

Directions:
1- Preheat over to 325. Spray a doughnut pan with nonstick spray.
2- In a large bowl combine the flour, cake mix, sugar, baking powder, cinnamon, and salt. Stir well.
3- Add in the milk, egg, vanilla. Stir. Add a few tbsp. sprinkles, stir.
4- Pour batter into a piping bag. Pipe batter into pan until 2/3 full.
5- Bake 8 to 10 minutes. Allow to cool in pan a few minutes, than transfer to wire rack.

Glaze:
Ingredients:
1 cup powdered sugar
1/2 tbsp. corn syrup
1/2 tsp. vanilla extract
1-3 tbsp. water

Directions:
1- Stir together. If thick, add more water. Spoon lightly over doughnuts. Add sprinkles while wet. Allow to sit to harden.

  3. Seriously Stephanie, these look awesome!! I am loving the current donut AND cake batter trend lately among the food blog world. When I finally get around to buying a donut pan, these will by the first recipe I make!
