Oreo Cheesecake Cookies


I met John when I was 19. I was in a sorority, he was in a fraternity, and we met at a mixer. A pretty stereotypical college experience if you ask me. However, I swear to you- I knew he was special the second I saw him. I was standing somewhere in the dirty frat house when he walked in. I saw him walk in the door and I instantly thought I wanted to talk to him. However I am the shyest person when I don't know people and I never got up the courage to talk to him. Eventually he approached me, I smiled and nodded and contributed minimal to nothing to the conversation. And yet, he asked for my phone number! Why, I'll never know- I seriously doubt I said 20 words in 20 minutes.

I am thankful every single day of my life that fate led me to him. That I went to that college, that I joined that sorority, that I attended that mixer. In John I find the yin to my yang. I am controlling, a talker, and extremely structured. John is laid back, a listener, and so easy going. He makes every day wonderful, and from time to time I like to do things just for him. Things to show him that I appreciate every little thing he does for me. And being the person that I am I show love in two ways: food and words. I made these cookies for John, and strictly for John. I'm not a cheesecake person, I'll eat it if forced (because you know, we're often forced to eat cheesecake...) but John just loves it. So these were for him. And this post is for him too. For all of his support. For all of the cold dinners he's eaten while I shouted, "JUST WAIT! I DON'T HAVE THE PERFECT SHOT YET!" For all of the dishes he's washed. For all of the trips he's gone on with me to find the perfect napkins, or dishes, for my blog. And above all else, for all of the love and support he offers me in every single aspect of my life. The least I can do is bake the man some cookies!

(Oh and if you're wondering, he said the cookies were amazing! Sweet, soft center with crisp outsides. The dough was gooood and I was tempted to not even bake them, but just eat it raw.)

Ingredients:
1/2 cup butter, at room temperature
1/3 cup cream cheese, at room temperature
1 cup granulated sugar
1 tsp. vanilla extract
1 cup flour
1/2 cup mini chocolate chips
1 cup Oreo crumbs

Directions:
1- Preheat the oven to 375. Line a cookie sheet with a silpat or parchment paper.
2- In a stand mixer beat together the butter and cream cheese until combined.
3- Beat in the sugar and vanilla until light and fluffy.
4- Beat in the flour until well incorporated.
5- With a spatula fold in the mini chocolate chips.
6- Roll the dough into 1-2 inch balls. Roll the dough balls in the cookie crumbs until evenly coated.
7- Place on the baking sheet. Bake for 12-15 minutes until golden on the outside.

Allow to cool at least 2 minutes on the cookie sheet before transferring to a wire rack to cool.

  5. I tried these cookies last night and they did not turn out well. The dough was very wet once everything was mixed. I added a cup of flour and should have probably added another cup of sugar to help keep the sweet cheesecake taste.

  6. What sweet words about the man you love. I'm 56 & looking for the love of my life after a 37 year marriage in which I tried too hard to keep together & put up with way too much. Thanks for helping me realize that true love is real...oh, & I'll try your cookies too...they sound yummy!! Have a wonderful day :-)

  7. I tried these cookies the other night and they were a disaster. The dough was delicious, but the cookies were more like pancakes - they didn't rise at all. I cooked these on a "professional baking mat" (that's what it says on the mat). The second batch I cooked directly on the nonstick cookie sheet, and they were a little better but they were still extremely flat and hard. I cooked them for 11 minutes, I'm not sure if the problem is the cookie sheet or if they were cooked too long. I saved 1/2 the dough, if you have any suggestions let me know!

    1. Oh no! I use those same kinds of mats... Maybe chill the dough? I'm not sure why that happened but I find chilling dough fixes most problems.

  10. Just made them on my stoneware and they came out great!!!! I also doubled the batch and got over 4 dozen cookies!! Will make again! Thanks for sharing!
