Pizza Puffs

I love food blogs. I love getting a little glimpse into what other people are doing in their kitchen. There are certain blogs where I know I can go to find recipes we will like in our house. Lauren's Kitchen is definitely one of my favorite blogs and I know I've said that many times on this blog. I just feel like we have very similar tastes in food and cooking styles. So when I saw this recipe pop up on her blog I was excited! They looked awesome.

I made these for a quick lunch on Halloween. My sister was over to help pass out candy to the trick-or-treaters and I wanted to make something that we could pop in our mouths and that didn't require us to sit down to a formal lunch. These were perfect. Not only were they delicious but they were easy! If you have kids I could see this being a big hit. Best of all the possibilities are limitless. You just mix in any toppings you like and VOILA! I'd love to do a veggie one but my sister is a veggie hater so I kept it to the basics. This will definitely be repeated in our house.

Ingredients:
3/4 cup flour
3/4 teaspoon baking powder
3/4 cup whole milk
1 egg, lightly beaten
1/2 tsp. Italian seasoning
1/4 tsp. garlic/onion powder blend 
4 ounces mozzarella cheese, shredded (about 1 cup)
1/2 cup pizza sauce

Directions:Preheat oven to 375o. Grease a 24-cup mini muffin pan.

In a large bowl, whisk together the flour and baking powder; stir in the milk and egg.

Stir in the cheese and seasonings and let stand for 10 minutes.

Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, about 25 minutes.
Microwave the pizza sauce until warmed through.  Serve the puffs with the pizza sauce for dipping.

  1. these look so good!! i think i'm going to make them today! do you think that these would freeze well? i think my son (14 months) would love these but there's no way we could eat them all in a day haha.

  7. My boys would tear these up! Great idea to freeze them too! I just made homemade pizza last night, but think these will be appearing on the dinner menu next week!

  10. Oh...this will be a great addition to our "snacks for dinner" nights. Might even added finely diced pepperoni to the batter too. Great recipe!
