Balsamic Chicken and Linguine


Does anyone else LOVE balsamic vinegar? Something about the tart taste with the hint of sweetness is just so appealing to me. My sister is obsessed with balsamic vinegar and would probably drink it straight from the bottle. Mel- this recipe is for you, you'll love it!

I love easy pasta dishes that are full of taste and flavor. This is a classic example of how homemade food doesn't need to take all day. Just putting a little time and effort in the kitchen can result in a delicious dinner. John and I both loved this meal and easily finished our plates. The best part about it is that it's made with just ingredients that I always keep on hand in the house. Definitely a great weeknight meal!

Ingredients:

1 6-ounce chicken breast (sliced into thin strips)
1 small red pepper (sliced into thin strips)
2 cloves garlic, crushed
Red pepper flakes
6-8 tbsp. balsamic vinegar, divided
1/4 cup extra virgin olive oil
1 tbsp. dried basil
1/2 cup grated parmesan cheese
1/4 box of linguine

Directions:
1- In a large pot cook the linguine according to the packages directions.
2- In a large skillet, add 1 tsp. of olive oil and garlic and heat over medium heat.
3- Add the chicken, stirring occasionally until almost cooked though. Add the bell peppers.
4- Add 4 tbsp. balsamic vinegar. Allow the vinegar to cook down until it thickens a bit.
5- Toss in the basil and a dash of the red pepper flakes.
6- Add the linguine, olive oil, and remaining balsamic vinegar, according to taste. (1-2 additional tbsp. depending on how tart you want it.)
7- Toss in the parmesan cheese. Serve hot.

  4. We've had this a number of times now, but we recently replaced the red peppers with mushrooms, which we like a lot!
