Grilled Summer Chicken


I feel like it's been so long since I shared a new recipe with you! I hope you enjoyed last week's series on "Making Weekdays Work." I had a lot of fun writing it! But, now back to the real reason you come here- food. Remember a few weeks ago when I shared my recipe for peach tomato sauce? Well, I have a lot of it leftover- a LOT. So I decided to use some to top a simply marinaded piece of grilled chicken, and ta-da! Delish. The sauce has a thicker consistency so it's more like a brushetta topping. If you don't want to make the sauce you can easily use my adaption below. Either way this is a great recipe for these last few days of summer. Enjoy.

Ingredients:
2 chicken breast
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Italian seasonings
Salt and pepper
1 clove garlic, smashed
3/4 cup vidalia onion peach tomato sauce or see adaption below

Directions:
1- Combine chicken, oil, vinegar, seasonings, salt/pepper, and garlic in a large zipper bag. Shake well. Allow to marinade at least 1 hour, more if desired.
2- Grill until cooked through. Topped with heated peach tomato sauce.

Adaptation:
If you don't want to make the tomato sauce, combine 1/2 cup of diced tomatoes with 1/4 diced peaches, 1/4 cup cooked vidalia onions, 1 tsp olive oil, and salt and pepper. This will make more of a brushetta topping but it will give the same flavors.
