Biscoff Doughnuts


Back in my childless days I baked regularly. Now I tend to have limited kitchen time and only bake when I need a dessert for an occasion or party. One of the things I miss the most from my pre-Landon days is when I used to browse food blogs, find a dessert recipe I just NEEDED, and immediately go make it. Those days don't happen often anymore, but on New Years Eve I was struck with that desire to just go bake something delicious. You see, we had fun plans for NYE- we actually had two parties to attend, both with multiple babies around Landon's age. But that morning the little man woke up with a fever so we had to cancel all of our plans and stay home. I decided if we were going to sit home we were going to do it in style- sweat pants and doughnuts. That's my kind of style!

I've had an unopened jar of Biscoff in my house for months so I decided to try to find a recipe using it. Low and behold- someone else had made Biscoff doughnuts in the past. I followed the original recipe with a few tweaks and it resulted in a deliciously rich doughnut. Try these- they are just so good!

Ingredients:

1  cup all purpose flour
1/2  cup sugar
1/2 teaspoon salt
7 tablespoons milk
5 tablespoons creamy Biscoff spread
1 teaspoon baking powder
1 egg
1/2 teaspoon vanilla
1 tablespoon melted butter

Optional:
Frosting or glaze/M&Ms/Sprinkles

Directions: 
1- Preheat oven to 325 degrees. Mix together flour, sugar, baking powder and salt in a bowl. Add milk, egg, biscoff spread, vanilla and melted butter. Whisk to combine.
2- Transfer dough to a ziplock bag. Snip off a corner of the bag and pipe dough evenly into a 6-cup doughnut pan.
3-Bake for 10-12 minutes, or until dough is set (it won’t be golden brown, but should be springy.) Remove from the pan and cool completely.
4- Top with your favorite frosting or glaze, then decorate with M&Ms or sprinkles.

Cake Batter Doughnuts


I have some great blog readers who comment regularly, email regularly, etc. One of these amazing people sent me her recipe for cake batter doughnuts knowing it would be something I'd drool over. I can't believe it took me so long to make these bad boys, but I finally got around to it. I made these for that bake sale I mentioned in my last doughnut post and they were great. I actually tasted a bite of these since John insisted on having one (even though I reminded him they were for charity... can't trust that John of mine!) And clearly if he was going to try one I *needed* to steal a bite of it. Clearly. But what's not to like, I mean, it's cake batter and vanilla glaze and sprinkles. Yes please!

Ingredients:

1 cup all purpose flour
2/3 cup yellow cake mix
1/4 cup sugar
2 tsp. baking powder
1/4 tsp. cinnamon
1 tsp. salt
3/4 cup milk
2 eggs, beaten
1 tsp. vanilla extract
sprinkles (several Tbsp.)

Directions:
1- Preheat over to 325. Spray a doughnut pan with nonstick spray.
2- In a large bowl combine the flour, cake mix, sugar, baking powder, cinnamon, and salt. Stir well.
3- Add in the milk, egg, vanilla. Stir. Add a few tbsp. sprinkles, stir.
4- Pour batter into a piping bag. Pipe batter into pan until 2/3 full.
5- Bake 8 to 10 minutes. Allow to cool in pan a few minutes, than transfer to wire rack.

Glaze:
Ingredients:
1 cup powdered sugar
1/2 tbsp. corn syrup
1/2 tsp. vanilla extract
1-3 tbsp. water

Directions:
1- Stir together. If thick, add more water. Spoon lightly over doughnuts. Add sprinkles while wet. Allow to sit to harden.

Baked Chocolate Doughnuts


Important question of the day: is it "doughnuts" or "donuts"? Who knows... I'm pretty sure it's the first, so I'm going with it. Dunkin' Donuts has ruined the spelling for all of us. Today is national doughnut day, believe it or not. Who knew such a thing existed? I didn't until the radio informed me of it this morning! Luckily I had a doughnut recipe ready to go.

I made these for a bake sale and they were a big hit. I mean, they're chocolate doughnuts with chocolate fudge drizzle, really how bad can it be? I am such a fan of baked doughnuts, they are much more cake-like than traditional fried doughnuts, but to me that's a positive thing. If you still don't have a doughnut pan you need to get one, they are cheap and you'll find plenty of times to use it!

Ingredients:
1 3/4 cup cake flour
1/4 cup cocoa powder
3/4 cup granulated sugar
2 tsp. baking powder
1 tsp. salt
3/4 cup milk
2 eggs, lightly beaten
2 Tbsp. canola oil
1 tsp. vanilla extract

3/4 cup chocolate chips
Sprinkles

Directions:
1- Preheat the oven to 325.
2- Combine the first 5 ingredients in a bowl. Stir well.
3- Stir in the milk, egg, oil, and vanilla until well combined.
4- Transfer the batter to a large zipper bag (cut one tip off) or piping bag. Pipe the batter into greased doughnut pans, filling 2/3 of the way.
5- Bake 8-10 minutes.
6- Allow to cool in the pan for a few minutes than transfer to a wire rack.
7- Once cooled, melt the chocolate chips. Pour the melted chocolate into a zipper bag (cut one tip off) or piping bag. Pipe a drizzle of chocolate over the doughnuts. Cover with sprinkles.

Strawberry Doughnuts


So ever since my first attempt at doughnuts I've been hooked! I love my doughnut pan and love researching fun new recipes to try with it. A few weeks ago we had a new addition to our family, a beautiful baby girl- my first niece, and I am simply smitten with her. When she was born I wanted to bring a few items over to my sister-in-law and brother-in-law to ease some of the burden of being home with a newborn. I decided to make them some form of breakfast, and decided to go with these doughnuts. They are a tad bit healthier than traditional doughnuts as in there is no glaze or icing, and they are a bit more muffin-like than a doughnut. I also liked that there was some fruit in them... because clearly fruit makes them healthy, right?! RIGHT?! These aren't your typical overly sweet doughnut, but they are still quite tasty. John and I were fans and I hope the new mommy and daddy were too!

Ingredients:

1 cup whole wheat flour
1/3 cup sugar
1 tsp baking powder
1/4 tsp cinnamon
1/2 tsp salt
1/3 cup milk
1 egg
1 tbsp melted butter
1/3 cup diced strawberries
1 tbsp pure maple syrup
Directions:
Preheat oven to 425 and grease doughnut pan.
In a small bowl, stir together berries and syrup. In a large bowl, mix together dry ingredients, then add milk, egg, and butter, stirring until just combined. Add berries. Fill each cup about 2/3 full. Bake for 7-9 minutes, until tops spring back.

Cinnamon Glazed Doughnuts


Hi, my name is Stephanie, and I am here to confess my sins some facts about me.  You just need to know these things.

1- I buy butter, sugar, chocolate chips, and vanilla extract at Costco. Yes- I buy metric tons of them, and go through multiple Costco trips of each a year. I'd buy flour there too if it wouldn't take up half my house.
2- I collect random cooking items, like doughnut pans, just because.
3- Sometimes, at 8:00 on a Thursday night, I just need to bake. And sometimes that results in doughnuts.
4- I'm on the school nutrition committee, yet I fed these doughnuts to my students. This clearly was not nutritious. In my defense I only gave each kid 1/3 of a doughnut, which probably makes me the meanest teacher EVER. (Right guys?! I know you're reading this! My students just discovered my blog and now read it daily, much to my dismay and humble embarrassment.)

So back to the business of doughnuts. If you're a fan of my facebook fan page this picture must look quite familiar. And let me tell you, these things are good stuff. It was my first time making doughnuts and these were a success. They are super pretty and quite easy to make. They were a bit... cakey... but that wasn't an issue. They tasted like a cross between a cupcake and a doughnut, and pardon me for asking, but can you imagine anything more amazing?

If you don't have a doughnut pan they are a cheap investment. (Really cheap if you convince your sister to buy them for you for the holidays like I did- Thanks Melly!) But in all honesty, they are about $10 a pan and you will use them over and over again. Well worth the investment, and much healthier than frying them.

Doughnuts:
Ingredients:
1 cup flour
1/2 cup sugar
1 tbsp baking powder
2 tsp cinnamon
1 egg
1/2 cup milk
1 tsp vanilla
4 tbsp canola oil

Directions:
1- Preheat the oven to 450.
2- Stir the dry ingredients together. Add the egg, vanilla, and milk then whisk together for 1 minute. Add the oil and continue to whisk until well combined.
3- Grease the muffin tins. Fill each 2/3 of the way. Bake for 7-9 minutes. Cool completely before icing. Yields 10 doughnuts.


Icing 
Ingredients:
1 1/8 cup powdered sugar
3/4 tbsp. light corn syrup
3/4 tsp. vanilla extract
1-3 tbsp. water


Directions:
1- Whisk the first four ingredients together. Add the water slowly until it reaches the desired consistency. 
2- Spoon over the doughnuts. Top with sprinkles, if interested.
