Chicken Caesar "Burger"


Hi there! Sorry for no post on Friday, but I have some craziness going on in the Stephanie Cook's kitchen. It seems that my son has a dairy allergy and I am currently working on figuring out how to cook and eat dairy free. It's been an experience- that's for sure. We are still in the testing phases of this but for now I have to eat completely dairy free so I don't pass any dairy onto him. With that said, I will continue to cook and try new recipes, but it should be interesting since dairy is such a huge part of our diet. What I plan to do is write the recipe the way a "normal" person would make it and include my dairy-free notes either on the bottom or on the side. Before I get to that though I still have a few recipes to share that are full of dairy, so let's get to it, shall we?

This "burger" was right up my alley. Breaded chicken, cheese (WAHHH I miss you cheese!), and caesar salad... what's not to love. Oh, and did I mention BACON? Yes... there was bacon in this too. John and I both loved it and it was a nice varient from our typical dinner routine.

Ingredients:
2 boneless skinless chicken breasts
1 egg
1/2 cup breadcrumbs
1/2 cup shredded mozzarella cheese
2 tablespoons parmesan cheese
romaine lettuce
caesar dressing
2 slices cooked bacon
2 rolls

Directions:
1- Preheat the oven to 350.
2- In a small bowl beat the egg. Dip the chicken in the egg and then in the breadcrumbs. Place on an oven safe sheet and bake for about 20 minutes, or until chicken is cooked through.
3- Remove chicken from the oven, top with the mozzarella cheese, and place it under the broiler until the cheese melts.
4- Meanwhile, toss the romaine lettuce with the parmesan cheese and dressing to taste.
5- Top each roll with a chicken breast, caesar salad, and 1 strip of bacon sliced in half.

  1. Really sorry to hear about your son! That stinks. I'm sure you will be able to adjust and create amazing meals that are dairy free.

  3. Yummy sandwich. Bummer about the dairy allergy. I feel your pain. My DH was on a low iodine diet for several weeks. That meant no dairy, no processed anything, nothing that you couldn't identify the salt in it. It was tough. I wish you luck and I hope it gets better.
