Asian Chicken Pizza


As much as I love to cook I love to eat out even more. I love everything about eating out- particularly the part where my kitchen stays clean. But as my skills in the kitchen develop my selection of restaurants narrows. I like places that can bring me something better than I can make it, or bring me something I don't typically make (aka lots of sushi and Thai food). Without fail we go out to eat on Fridays. Just something about the week being over makes me feel like celebrating. However a few weeks ago we decided to stay in on a Friday and I knew I needed to make something exciting or the temptation to go out would be too strong. Enter this pizza.


I love Asian food as much as I love Italian, so combining the two was like the golden child of all meals. This pizza was amazing. And I really want to stress that fact to you- This.Was.Amazing. John was moaning and groaning and proclaiming me the Queen Of Cooking (ok... total exaggeration. But he was moaning and groaning and telling me it was amazing!) The chicken and the glaze are subtle, with a nice rich garlic taste. They are complimented by the crisp crust. I can't wait to make this again- I think I'll make it within the next couple weeks. It's just so good!

Ingredients:
Pizza dough
5 ounces of chicken, chopped into small pieces
1/2 tsp. red pepper flakes (less or more depending on how hot you want it)
3 cloves garlic, minced
1/4 cup low-sodium soy sauce
2 1/2 tbsp. honey
3/4 cup rice wine vinegar OR apple cider vinegar
1 cup mozzarella cheese
Olive oil
Sesame seeds (optional)
2 tbsp. sliced green onion

Directions:
1- Preheat the oven to 450.
2- Combine the red pepper flakes, garlic, soy sauce, honey, and vinegar. Stir well, set aside.
3- In a small skillet cook the chicken. Remove from the pan and set aside.
4- Pour the sauce mixture into the pan. Heat over medium heat until it thickens and becomes syrup like, about 10 minutes. Add the chicken, toss well.
5- Form the dough. Top with a drizzle of olive oil, rubbing to coat the dough.
6- Top with the chicken/glaze mixture. Make sure it's evenly coating the dough.
7- Top with the cheese and sprinkle with sesame seeds if using.
8- Bake 10-12 minutes. Top with green onion. Serve hot.

  1. This sounds really good Stephanie! I feel the same way about eating out as you do- I like to go somewhere where I know I can't make it better in my kitchen or eat somewhere with a cuisine we hardly ever eat, like sushi. And Mexican, because I can't get enough of Mexican food!

  4. I love the idea of using apple cider vinegar instead of the rice vinegar. Rice vinegar makes me kinda sick.
    I love unique pizzas! My favorite is Chicken Enchilada pizza!

  8. I made this tonight, and you weren't kidding--it was amazing! Next time I'll use a little less red pepper flakes (mostly because I have no tolerance for spice!). I also couldn't get the sauce to thicken, but it didn't take away from the flavor. I just made sure the chicken absorbed as much as possible. My fiance loved it too, so I'll be adding it to our menu rotation. Thanks!

  9. Made it tonight except; used a flat pre-made crust, added shredded carrot with the green onions, subbed sweet chili sauce for the red paper flakes, and used sesame oil (tiny bit) in the sauce. Oh and we used dairy-free-cheese. But it was tasty and loved the idea, may have to make it a regular meal! Thanks!

  10. I'm eating this in between typing and can tell you it's delicious! The only thing I'd change next time is the my selection of vinegar. Next time I'll use a vinegar that's salt free as the seasoned rice vinegar I used was too salty for my taste.
