Crock Pot Chicken in a Marsala Herb Sauce
So John and I just recently came home from our wonderful vacation in Maine. I know this is probably weird, but the two things I want most when vacation is over are a clean house and a home cooked meal. There is just something comforting about the combo of the two after time away.
I recently purchased a package of bone-in chicken breasts from the butcher, wrapped them individually, and threw them in the freezer. I don't know if I have mentioned this here before but we are SO limited on freezer space it's ridiculous. I want a deep chest freezer for my birthday for the garage... it's all I want. So needless to say, these chicken breasts are taking up a lot of precious space. I decided I had to make a dent in the stash.
I had jam packed my first day back from vacation with appointments so I figured why not throw something in the crock pot and come home to that home cooked meal I have been desiring? Enter this dinner. John and I both loved this. The whole house smelt amazing and the chicken was very moist and flavorful. I was impressed with how nicely the chicken looked too- it looked golden, as if it baked in the oven. The sauce it makes is also great. The sauce definitely has a marsala taste to it but the herb sauce mix gives it a little extra pizzazz. I almost wish I had made mashed potatoes instead of oven roasted because it would have been a great gravy on the mashed potatoes. This is definitely a winner- we both loved it and it took little to no effort.

Ingredients:
2 bone-in chicken breasts (skin removed or on, your choice)
1.5 cups chicken broth
1/2 cup Marsala wine
1 packet (envelope) Knorr Garlic and Herb sauce mix
Directions:
1- Place the chicken in the base of a small crock pot (or use an oven safe covered dish inserted inside a larger crock pot, like I do).
2- In a bowl combine the broth, wine, and sauce mix. Stir well.
3- Pour the sauce over the chicken.
4- Cook on low for 8 hours. Serve hot.

This looks great! Once I stop working 10 hour days (in 2 weeks), I'll try this recipe. Otherwise my chicken would have to sit in the pot for 12 hours!

ReplyDeleteI put it in frozen and I left the skin on. I would have removed the skin but I froze the chicken with the skin on and had no way to remove the frozen skin lol! Next time I'll pull the skin off BEFORE I freeze it.

ReplyDeleteNicole- they sell it at liquor stores, or even grocery stores sell a Marsala cooking wine.
