Basic Yellow Cake


My uncle's birthday is coming up this week and we had a small celebration for him this past weekend. I volunteered to bring a cake because it had been a long time since I made a cake. I am going to be honest with you... I really have always preferred boxed cake mix over homemade cake. I just find it more moist and more enjoyable. However, I keep trying and keep making cakes from scratch because I figure practice makes perfect.

After much internet searching I decided upon this recipe. It seemed pretty classic and I figured it was exactly what I was looking for. Instead of making a two layer cake I made a bundt cake- I really love how cake looks in a bundt pan. Well, if you're looking for my verdict... here it is... I still love boxed cake mix. I KNOW, I KNOW... don't hate me and don't stop reading my blog... I just like it more. This cake was still good- it was dense rather than fluffy, but it was still good. If you like a more dense cake this recipe was definitely a winner... but for me, I am still sticking to my box. If you think you have a recipe to prove me wrong please do!

Ingredients:

4 Eggs
2 cups Sugar
2 cups Flour
2 tsp Baking Powder
1 tsp Salt
1 cup Buttermilk
2 tbls Butter
1 tsp Vanilla

Directions:
Beat eggs until thick. Add sugar gradually.
Continue to beat until light. Sift flour, salt and baking powder together and add to eggs.
Heat buttermilk and butter to boiling point. Add to first mixture.
Add vanilla. Bake in greased bundt pans for 35 minutes or until toothpick comes out clear.

  1. Don't worry Stephanie...I am totally with you on the boxed cake front. I love doctoring up boxed cake mixes so that they have originality but are still fluffy and flavorful!

  2. I found this recipe on the fresh loaf. I think it makes a fluffy cake. I love homemade pound cake but the box cakes DO make fluffy end results. I think this one is it. I don't see how the one that you used produced anything like fluffy with the equal mix of flour and sugar and no butter? OMG! I LOVE butter. LOL

    3 cups all-purpose flour
    2 cups sugar
    1 tablespoon baking powder
    1/2 cup non-fat dry milk

    Combine flour, sugar, baking powder, and non-fat dry milk. Store in an airtight container or baggie. Keeps well in the pantry for months!

    To replace in recipes calling for a yellow cake mix:

    Use in any recipe calling for a yellow cake mix as a base (add 1 1/2 teaspoons vanilla  to the recipe along with the cake mix as the recipe will assume vanilla was included in the store-bought mix).
    to make a basic yellow cake,

    Cake mix directions:.

    1 recipe Homemade Yellow Cake Mix
    1 1/4 cups water
    1 1/2 teaspoons vanilla
    1/2 cup butter, softened
    3 eggs

    Place Homemade Yellow Cake Mix in a bowl. Add water, vanilla, butter, and eggs. Combine with an electric mixer then beat two more minutes. Pour into a greased and floured cake pan. Bake at 350-degrees, using these baking times:

    8″ or 9″ cake rounds — 25-30 minutes
    13 x 9 pan — 40-45 minutes
    cupcakes — 15-20 minutes
    tube/bundt pan — 45-50 minutes
