Herb Rubbed Turkey Cutlets


Confession: Meat scares me.

I know how to cook chicken and shrimp like nothing else- I can do either with my eyes closed and my hands tied behind my back (well... maybe that's an exaggeration...) However I don't really eat most other meats so when I go to the butcher or the meat section of the grocery store it's like I am in a foreign land. I recently ventured to Wegmans which is an awesome grocery store. Unfortunately there aren't any super close to me so when I do go to one I love to wander around and see what they have. Their meat department is awesome- everything is fresh, well packaged, and just clean. I grabbed a pack of thin sliced turkey cutlets figuring it would offer us some form of variety. I wasn't really sure what to do with them. They were super thin so I was thinking of wrapping them around some stuffing, or even a risotto type mixture, but in the end I decided to just heavily season them and pan sear them. I served it with some delicious gravy and it was very satisfying. We both enjoyed this and it was really so simple that I question the need to post it here but I figure there must be other people out there staring at the thin turkey cutlets asking "What now?!"

I will say that these do need gravy or some type of pan sauce. John and I both agreed that since the turkey was so thin it was a tad dry (probably due to me overcooking it...) but the gravy livened it up a lot! Also, I didn't measure the seasonings because it really is to taste, you can't mess it up. Just add as much as you like of each.

Ingredients:
3/4 pound thin sliced turkey cutlets
Cooking spray
Garlic powder
Onion powder
Thyme
Salt
Pepper
Parsley

Directions:
1- Spray a nonstick skillet with cooking spray and turn the heat over medium-high.
2- In a bowl combine the garlic powder, onion powder, thyme, salt, pepper, and parsley to taste. Make about 1 tablespoon worth of seasoning, combining the above ingredients. I used equal parts of each.
3- Lay the turkey out flat and spray both sides with cooking spray. Sprinkle some seasoning over the top of each turkey cutlet and rub it into the turkey with your hand. Place seasoned side down in the skillet. While it cooks, season the other side and rub it in.
4- Flip after browned and cooked through on the other side. Cook about 2-3 minutes per side. It may require more time if your turkey is thicker than mine.
5- Serve with your favorite gravy or pan sauce.

** 3 points per 3 ounces of turkey
