Easy Snickerdoodles


Hello out there... anyone here?!?!?!

I'm so sorry I've disappeared. It's been a week since my last post, and honestly, it's been the hardest week for me as a mom. My son is still not completely better and I am just so upset. I have had no interest in food, cooking, blogging, etc. I have watched every morsel I eat, attempting to prevent his reactions, and so far I haven't been able to. Stress is my middle name lately. Luckily he's so stinking cute!

But moving on, shall we? These cookies are dairy free/soy free deliciousness! Landon and I are part of a mom's group and we got together this past week. I brought these cookies along and man oh man, they were good. I've been baking a lot with Duncan Hines cake mixes as bases because many of the flavors are dairy free/soy free. Kudos to Duncan Hines for that- they have saved my sanity when the needs for sweets have hit over the past couple months. Best of all even the most novice cook can make these, but the results don't taste novice at all!

Ingredients:
1 package yellow cake mix
2 large eggs
1/4 cup vegetable oil
3 tbsp sugar
1 tsp cinnamon

Directions:
1- Preheat the oven to 350.
2- In a large bowl combine the cake mix, eggs, and oil. Stir until well combined.
3- Mix together the sugar and cinnamon in a small bowl.
4- Using the cookie batter, roll 1 tbsp balls of dough. Then roll the balls in the cinnamon sugar mix.
5- Place on lined cookie sheets and bake for 8-9 minutes.

  2. Oh my goodness, Stephanie, he is so adorable! I'm so sorry you've had a rough week. Being a mom is so hard, and I imagine it's even harder when you're dealing with the issues you guys have had. You're such a good mama! I hope things get much better very soon!

  3. Have you tried cutting out eggs and wheat? It sounds awful, but my friend's baby was allergic to eggs, soy, dairy, and wheat/gluten--she had to get creative, but it wasn't impossible. Her baby girl has some sort of condition that she will supposedly outgrow by the time she passes toddlerhood; sorry, I can't remember the details. I do remember that symptoms included blood in her diaper, if that helps.

    1. Thanks Beth! That's the path it would go eventually if he doesn't improve, but so far things are going well now, so hopefully we've got this in check!
