Chicken Cacciatore
It amazes me that after 2+ years of blogging I still haven't blogged all of my favorites from childhood. I think it's because I get all warm and fuzzy about trying new recipes that I often neglect the good ol' classics that I was born and raised on. This recipe is a classic that I ate almost weekly for many years. It's goooood stuff- and best of all it's so stinkin' easy.
Obviously it goes without saying that I love this recipe. My mom used to make it and now it's a favorite for John and I. I don't make it often but I do get a little peppy when I know I am making it. Best of all, it uses such common ingredients that you can probably go make it now! Definitely a classic for busy weeknights when cooking is the last thing you feel like doing.

Ingredients:
2 bell peppers, cut into pieces
1 small onion, diced
1 tbsp. olive oil
2 cloves garlic, diced
2 chicken breasts, cut into small pieces
Salt & pepper
1 jar of tomato sauce (or an equivalent amount of homemade)
Directions:
1- In a large skillet combine the olive oil, onions, pepper, and garlic. Heat until the peppers are slightly short of tender- about 4-5 minutes.
2- Add the chicken. Allow to brown, then flip. Cook until almost cooked through.
3- Add the jar of tomato sauce. Simmer over low heat for 15-20 minutes, or until sauce is heated and chicken is cooked.
4- Season with salt and pepper.
5- Serve over pasta.
Funny, I just started asking my mom for childhood recipes, too! It's fun to make stuff that you loved as a kid!
