Diet Coke Cupcakes
This will be my last post for a week. John and I are going on vacation- but I promise to return with yummy recipes soon!
If you have ever done Weight Watchers you know about Diet Coke Cupcakes. I have been hearing about these mysterious things for years now but never made them because honestly, it sounds gross! Soda+Cake Mix= Not good. However, I was very wrong! I decided to make them for my end of the year class party because one of my students can't have egg and therefore has NEVER had a cupcake before in his life. I couldn't handle that fact and needed this poor 7 year old to try a cupcake immediately. They were really good. The kids had no idea they were different. Neither did John- so I guess they are pretty close to the real deal!
Ingredients:
1 box of cake mix
1 can of diet soda
Directions:
1- Combine the two ingredients.
2- Stir until thoroughly combined.
3- Fill cupcake liners 3/4 of the way.
4- Bake approximately 15-20 minutes.
** 2 points per cupcake without icing

Another great "magic" recipe is to mix one can of pumpkin puree with a boxed cake mix. Any flavor works, but my favs are spice cake or dark chocolate. These are incredibly moist, and have a little more nutritional value than the soda ones. (I like the soda ones too--try diet cherry Dr. Pepper with a spice cake mix!)

Deletedoes it only work with chocolate flavored cake mixes?...
ReplyDeleteNope- any flavor! However with a vanilla/white/strawberry cake I'd use diet sprite!
